Thoughts on the Michelin Guide 2024

Sebastian Myhre, who runs both Stallen and FYR Bistronomi, shares his thoughts on this year's awards. Stallen has one star and both restaurants have received the green star for sustainable operations. Myhre expresses excitement and hope to keep the star, while mentioning that FYR Bistronomi is a strong candidate in Oslo.

- I've received an invitation to Helsinki, and I don't think you're invited there to witness the loss of your star," says Myhre. "We're in a defensive position for the first time, and I'm very excited, but my gut feeling is that we'll keep our one star.

Other potential star candidates

Myhre also highlights other candidates in the Norwegian restaurant industry, such as Jimmy Øien's restaurant Rest, which he believes has a good chance of getting its first star.

- Rest is a name that pops up as often in star discussions as À L'aise did in 2023. "They have a good concept and Jimmy is incredibly good. I'd be very surprised if they don't get anything," says Myhre.

Sustainability in focus

The article in Prepp also highlights the importance of sustainability in the restaurant industry, which is a key focus for both Stallen and FYR Bistronomi. Both restaurants have received the Green Star, an award for their efforts in sustainable operations.
